John is a native of Longford Town. John started out his career in his hometown working as a butler for Lord and Lady Granard in Castle Forbus, Co. Longford and in their home in France. John moved to Galway in 1967 and worked for the Great Southern Hotel Group until 1977 when he moved to Eyre House Restaurant in Eyre Square. John moved with the Eyre House team to the existing premises on Forster Street in 1980. John has remained a constant presence through the changing phases of the life of the Park Restaurant.
