Bob O' Keeffe
Executive Chef

Bob O'Keeffe is a native of Waterford City. He embarked on his career in his home town in the Stone Court Restaurant, Dooley's Hotel and the Tower Hotel where he worked over a 3 year period and gained invaluable experience in all departments of the kitchen. In 1984 he went to Waterford Institute of Technology where he studied cuisine for two years. He graduated in 1985 as "Student of the Year" and went on to work at the famous
Ballynahinch Castle in Connemara. In 1986 he joined the Eyre House Restaurant in Galway and worked his way to Sous Chef. In 1989 he moved to its sister restaurant "The Park" on Forster Street as Head Chef.

Martin Keane

Martin hails from the town of Clifden in Connemara and began his career in the Clifden Bay Hotel. On completion of his training Martin set off on his travels; learning the culinary arts of many different countries. He first moved to the Sonesta Hotel in Amsterdam and spent 2 years there. Next he joined The Hilton International Group. Beginning with the Corfu Hilton in Greece, he then moved to the Jerusalem Hilton in Israel for a year, then onto the Kensington Hilton in London for 2 years before moving to the Sydney Airport Hilton in Australia for 5 years. He then moved to Le Sands Restaurant/Signature Cafe in Sydney for another 5yearsbefore deciding to return to Ireland with his family. Martin joined the team at the Park House Hotel in 1993,where his extensive experience is appreciated every day by his co-workers and customers alike.

PJ Forde

PJ is a native of Silvermines in County Tipperary and began his career as a chef in Park House Hotel in 1990. He worked his way up to chef saucier and in 1995 he went to London to expand his culinary knowledge and skill. He worked in the Four Seasons "Inn on the Park" where he gained invaluable experience working alongside Jean Christophe Nouvelli.In 1997 he returned to Park House as sous chef and is currently a key member of our management team.
